Summer 2009 Recipe: Double Ginger Blackberry Crisp
Filling:
3 cups
blackberries
3
tablespoons brown sugar
1/2
teaspoon cinnamon
1 teaspoon
ground ginger
Topping:
1 cup
all-purpose flour
1 cup
brown sugar
1 teaspoon
baking powder
1/4
teaspoon salt
1/4
teaspoon allspice
1/2
teaspoon ground ginger
1 heaping
tablespoon crystallized ginger, chopped
2 eggs,
beaten
1/2 cup
butter, cut into small pieces
Preheat
oven to 400 degrees. Combine the blackberries, brown sugar, cinnamon, and
ginger
and spoon into an 8-inch baking dish. In a bowl, combine the flour, brown
sugar,
baking
powder, salt, allspice, and gingers. Blend in the egg. Mixture will be crumbly.
Sprinkle
topping mixture over the filling, and dot with the
butter. 5. Bake for 25-30
minutes
or until the top is crispy and brown. Serve warm.
